    Chef-Farmer Anthony Harris was one of our original farmers at the SG Tiki farm, and he also worked the line at Suis Generis before moving to North Carolina to expand his culinary and farming pallet. Anthony returns to be your curator for this six course dining and learning experience - New Visions of the Deep Southeast! What is the Deep Southeast? Begin in southeast Louisiana. Draw a line East to north Florida. Turn north and continue to piedmont North Carolina. The triangular pocket between these three points is the deep Southeast. Join us for a culinary dissertation on the cuisine of this region as we merge forgotten stories of the deep southeast with new awakenings in southern gastronomy. There will be homages to the many peoples mothered on this land: the indigenous and enslaved especially. Chef Ant, wielding newly honed techniques and meticulously sourced ingredients, presents Deep Southeast cuisine like it never has been before.   • Mycelial Magic - The World of Mushrooms

    It's certainly no surprise that we love mushrooms! After all, they are delicious and versatile in the kitchen - whether you are an omnivore or herbivore! For this Experience, Rickey & Katie Boudreaux of Mycelium Express join us to talk, teach & cook all things mushroom. We will discuss how to grow mushrooms, give tips on foraging, and an array of uses for mushrooms in the kitchen, including the amplification of flavor through fermentation. The eight course tasting meal will include mushrooms grown by Mycelium Express and transformed in various ways at the Tiki Food Lab. That's right, join us for a tour of the Tiki Farm and then settle into one of our kiddie pools located in the "cool" shade under the Tiki Food Lab with a view of the bayou.     Join us for what may be the most unusual food & music pairing around - a journey through a soundscape of Exotic Music & Food. Carlos Grasso (Pink Teddy Bear & Friday Night DJ at Suis Generis) will perform a special dinner set with microphones attached to plants, prep tables, sautée pans, around the farm, and even in the water. Executive Chef & Food Scientist, Ernie Foundas will cook a 6 course dinner from which Carlos will create a custom soundscape paired with, and performed during each course.
